What's the deal with powdered peanut butter?
The science of how this magical powder has come to exist is beyond me. Ok, perhaps not beyond me thanks to the powers of the almighty Google.

'Skinny' Peanut Butter Energy Bites
Ingredients
- ¾ cup powdered peanut butter (such as PB2 brand)
- ¼ cup water
- 3 tablespoon raw honey
- 1 ¼ cup old fashioned rolled oats
- ¼ cup mini chocolate chips
Instructions
- In a bowl, add first three ingredients and whisk together. After ingredients form a paste, switch to a spatula and stir vigorously until mixture is 'creamy' and there are no clumps.
- Add oats and chocolate chips. Stir well to combine. Oats should be evenly coated with peanut-honey mixture.
- Let chill in the refrigerator for 15 minutes.
- Using an ice cream scoop or spoon, take about 1 tablespoon of energy bite mixture and form into balls.*
Notes
- If hands become too sticky and the mixture sticks to hands instead of rolling into a ball, wash and thoroughly dry your hands before resuming.

These are the best energy balls I've made to date. I love that they have so much less fat than those made with peanut or other butters. I made a few changes. I'm not a fan of honey so used maple syrup (because, duh, I'm from NH!). I can't really eat chocolate, so used flax seed instead and then, on a whim, added 1/4 C low-sugar craisons. Delicious! I loved that they are not overly sweet like some balls that I've bought at bakeries. I got 18 balls (plus the equivalent of 2 more that I hate while making 😉). These will be great as a hiking snack as well as mid-afternoon pick-me-up.

Really excited I found this recipe again. These are a great snack without the guilt. The measurements are perfect! Really easy to make, I actually use a mixer, then roll the balls and toss them in the PB2 for a little extra kick!

This recipe is divine. I started making it on a weekly basis as a quick post-workout snack to hold me over until lunch.
However, like other commenters have noted, the nutrition facts are way off. I follow the recipe to a T and plugged the ingredients into multiple calorie counters, and the batch contains 1,440 calories. If you split it into 12 balls like the creator recommends, this comes out to 120 calories per ball -- 31 calories more than stated. This is a difference of about 35 percent.
I wouldn't call this a "skinny" recipe. The balls are SO small, so it's crazy to think that if you're on a 1,200-calorie diet, one tiny little ball accounts for 10% of your daily calories. I always have 2 at a time, so that would be 20%.
This recipe is delicious but easy to over consume.

These were pretty good! I didn’t have the raw honey on hand, but they were still good. I changed the mini chocolate chips to Lillys dark mini chips, I prefer dark chocolate. Yummy!
