Juicy, ripe peaches paired with creamy burrata cheese and salted prosciutto over a bed of lemon-tossed arugula makes a quick and easy salad just asking for a glass of wine to go with it!
This recipe is made with peaches, burrata, prosciutto, arugula, lemon juice, olive oil, salt, pepper, and aged balsamic vinegar.
Gently clean the outside of the peaches and slice them into ¼" slices.
In a bowl, toss the arugula with the lemon and top with prosciutto and the sliced peaches. Add the burrata.
Drizzle olive oil over the top and sprinkle with salt flakes and fresh cracked black pepper. Finish with a drizzle of aged balsamic vinegar.
