Strawberry Rhubarb Sangria has everything you need in a summertime sangria. Sweet strawberries and crisp rhubarb mingled with dry rosé wine for a sangria that's not too sweet, not too boozy, and ready to sip poolside all day long.
3-4cans soda water or lemon lime sodae.g. Sprite, 7Up, etc. see notes
Rhubarb Simple Syrup
2cupsrhubarbdiced small (about 4-5 stalks)
1cupsugar
1cupwater
Instructions
Strawberry Rhubarb Sangria
Combine rosé, rhubarb simple syrup, triple sec, peach schnapps, lemon juice and strawberries in a pitcher and stir until well combined.
Fill wine glasses or cocktail glasses with ice and pour sangria over the ice ½ up the glass. Top with either club soda or lemon lime soda.
Optional garnish ideas: rhubarb strips (peel strips of rhubarb using a vegetable peeler), sugared rim, flamed lemon peel (peel of a lemon, citrus side hit with the flame of a match)
Rhubarb Simple Syrup
In a medium size saucepan, combine the diced rhubarb, sugar and water.
Bring to a boil over medium high heat. Once it reaches a boil, reduce the heat to low and simmer for 15 minutes.
Strain and let cool.
Notes
If you prefer more wine forward, less sweet cocktails use club soda. If you want something that is more fruity and tastes less like wine use Sprite, 7Up or something similar.
