Strawberry Salsa

If you love the combination of sweet and spicy, this fresh strawberry salsa is perfect! Great on its own, but also delicious on top of grilled seafood, chicken, and steak. Serve it as an appetizer or as a taco topping on Taco Tuesday!

Ingredients

  • 2 cups strawberries diced
  • ¼ cup red onion finely diced, about ½ small onion
  • 1 jalapeño finely diced
  • 2 tablespoons cilantro chopped
  • 2 tablespoons lime juice
  • 1 avocado diced
  • ¼ teaspoon salt

Instructions

  • Removed the green leaves from the strawberries and dice in to small pieces, about ¼-inch dice.
  • In a medium-sized mixing bowl, combine the strawberries, avocado, red onion, jalapeño, cilantro, lime juice, and salt. Toss to combine.
  • Serve as an appetizer with chips, as a side dish or on top of protein. Store in an air-tight container for up to 5 days.

Notes

  • Use fresh, not frozen strawberries
  • Substitute any fresh fruit combination you like, just keep the measurements roughly the same.
  • Store in an air-tight container for up to 5 days.  After that the fruit will get pretty juicy, lose its flavor and texture, and the avocado will have started to brown.
