A tangy twist on the classic cocktail! Pomegranate mojitos are a favorite for summer around here. The mint is so refreshing and the pomegranate juice adds just the right amount of sweet fruit flavor!

Ingredients
1 ½ounceswhite rum
1ouncepomegranate juice
¾ouncemint simple syrup
½ouncefresh lime juiceabout 2 wedges
2 to 4ouncesclub soda
Mint Simple Syrup
1cupwater
1cupgranulated sugar
1bunchfresh mintabout 10 to 15 leaves
Pitcher of Pomegranate Mojitos
1 ½cupswhite rum
1cuppomegranate juice
¾cupmint simple syrup
½cuplime juice
3cupsclub soda
Instructions
In a saucepan, combine the 1 cup sugar, 1 cup water, and mint leaves. Bring to just a simmer over medium heat. Remove from the heat and let the syrup cool for about 5 minutes before straining the mint.
In a highball glass, pour the 1 ½ ounces rum, 1 ounce pomegranate juice, ½ ounce lime juice, and ¾ ounce mint simple syrup. Give the ingredients a quick stir then top with crushed or regular ice and top with club soda.
Garnish with fresh mint and pomegranate arils (optional) and enjoy!
Notes
To make this cocktail with a muddler instead of using mint simple syrup, muddle two lime wedges, 4 to 6 mint leaves, and 1 teaspoon sugar. Top with rum, pomegranate juice, ice, and club soda.
You can use fresh squeezed lime juice or bottled lime juice. The fresh lime has a bit more vibrant flavor.
Swap out rum for vodka or any other spirit you prefer - this cocktail is very versatile!
To make a non-alcoholic version: leave out the rum and add 2 ounces of extra club soda.
