Strawberry Coconut Margarita

Tropical and refreshing! Strawberry Coconut Margaritas are a crowd pleasing cocktail you'll get asked to make over and over again. The perfect blend of boozy sweet coconut and fresh strawberry that's dangerously easy to sip on.

Equipment

Ingredients

  • 1 ½ ounces coconut tequila
  • 2 ounces coconut milk
  • 1 ½ ounces creme de coco
  • ¾ ounce lime juice
  • 3 strawberries muddled
  • sweetened shredded coconut for garnish
  • agave for garnish
  • fresh strawberries for garnish

Instructions

  • Muddle the strawberries in a shaker until finely mashed.
  • Add the tequila, coconut milk, creme de cocoa, and lime juice to the shaker.
  • Fill the shaker with ice, cover and shake vigorously for 15 seconds.
  • Rim a glass with toasted coconut, fill with fresh ice, and double strain the strawberry coconut margarita into the glass. Shake the double strainer to drain all the cocktail from the pulp.

Toasted Coconut Rim

  • Spread the shredded coconut into one layer on a baking sheet. Bake in a preheated 350°F oven for 15 to 20 minutes until golden brown, stirring every 5 to 7 minutes. Let cool slightly before using.
  • To rim the glass, lightly dip the glass in lime juice or agave then into the toasted coconut. Shake off excess before turning over and adding ice.

Notes

  • Creme de coco is a sweet, coconut syrup commonly used for drinks like daiquiris.  The Coco Lopez and Goya brands should be available at most grocery stores with other beverage mixers.
  • You can use coconut tequila or plain silver tequila to make this drink.  The coconut tequila heightens to coconut flavor but its just as delicious with silver tequila.
  • If you don't have a muddler, the handle of a wooden spatula works great in a pinch.
