Crusty Soup Bread

Crunchy, crusty exterior gives way to tender, soft, white bread laced with sweet, roasted garlic. It is everything you need in a simple, no knead recipe for roasted garlic crusty soup bread.

Step 1

Line a dish with foil.  Place garlic, head removed, in center.  Pour olive oil over and close the foil.  Roast for 20 minutes.  Let cool.

Step 2

Combine sugar and water. Mix in yeast and proof for 5 minutes. In a bowl, mix salt and flour. Add dry ingredients to the yeast. Add garlic cloves and mix.

Make the Dough

Sprinkle flour over the dough and flip over.  Sprinkle again and cover with a towel.  Let rise 1 hour. Flour a surface and tip the dough onto it.

Step 4

Sprinkle again and fold the four sides on top itself.  Shape into a loaf.  Transfer to a bowl. Cover and rise for 30 minutes.  Preheat oven with a Dutch oven inside.

Remove the hot Dutch oven. Tip the dough onto parchment. Add to Dutch oven. Cover, bake 30 minutes.  Remove lid, bake for 10 minutes.
