Warming and hearty, pumpkin chili is the perfect comfort food for fall. Creamy pumpkin, savory beef, turkey, chicken, or even plant based protein with hearty beans in a spicy, seasoned tomato base.
In a heavy bottom pot, heat the oil over high heat, add the onion and sauté for 1 minute, then add the garlic and cook for an additional 30 seconds.
Add the ground beef and season with salt and pepper. Using a wooden spoon or spatula break the ground beef apart as it cooks to 'scramble' it.
Once the beef is mostly cooked add beer and stir, scraping the bottom of the pan. Add pumpkin purée, beans, tomatoes, brown sugar, and spices.
Bring to a simmer while stirring occasionally, then reduce the heat to medium-low. Cover and simmer for 45 to 60 minutes.
