Thai Peanut Dressing

Low Calorie Thai Peanut Dressing brings the taste of peanut butter, toasted sesame, green onions, and a peanut crunch with spicy heat but with 85% less calories.

Step 1

In a food processor, combine powdered peanut butter, water, sesame oil and rice wine vinegar. Blend for 10 to 15 seconds until combined.

Step 2

Add scallions, ginger, sriracha and fish sauce.  Blend until scallions and ginger are finely minced and incorporated.

Step 3

Add peanuts and pulse so the pieces are broken, not blended. It should resemble 'chunky peanut butter' pieces or larger.

Step 4

Add this dressing to a healthy salad to add an equally healthy addition of flavor. This tastes great on salmon as well!
