Everyone needs a back pocket recipe right? Well, this is mine. This homemade pasta sauce is so easy and so quick, there's no reason not to have a sauce that tastes like it's been simmering all day.
In a large heavy bottom pot, heat the olive oil and sauté onions until translucent. Add garlic and cook until fragrant. Stir in white wine and let reduce for 1 to 2 minutes.
Add tomato paste, Italian seasoning, salt, and black pepper. Stir to incorporate tomato paste and spices, the mixture should be thick.
Stir the tomato sauce in. Cook while stirring until the mixture starts to bubble. Reduce the heat to low, cover, and let it simmer.
Serve immediately or let cool and transfer to storage containers for later use!
