You can easily make restaurant-quality crispy chicken parmesan by swapping regular breadcrumbs for grissini breadcrumbs and a few ingredients. This chicken parm will be the best you'll ever have!
Slice each chicken breast in half. Pound chicken to ½ inch thick. Grind grissini breadsticks into small pieces. In a large bowl, combine crumbs, parsley, parmesan, salt, and white pepper.
Spread out the flour on a dinner plate. In a shallow dish, add well beaten eggs. One at a time, dredge the chicken in flour, then in the egg mixture. and finally into the breadcrumbs.
In a large skillet, heat the oil over medium-high heat. Cook the chicken breast 3 to 4 minutes on each side. Transfer cooked chicken to a sheet pan.
Preheat the oven to broil on high. Top each piece of crispy chicken with a layer of tomato sauce and slices of mozzarella. Broil until cheese is melted.
