The crust is simply made with graham crackers, sugar, and melted butter, and baked at 350F for 5 to 8 minutes.
Add all the ingredients to a mixer one at a time until smooth. Transfer filling to a springform pan with the crust. Bake at 350 for 1 hour. Chill overnight.
In a saucepan, whisk cornstarch and warm water. Add strawberries, lemon juice, and sugar and stir. Bring to a simmer then reduce to medium-low and simmer for 5 minutes. Remove from heat.
