A quick salsa, great for topping Black Bean Soup!

Ingredients

  • 1/2 cup chopped bacon (crispy)
  • 1 8.75-ounce can whole kernel corn (drained)
  • 1/2 avocado diced (skin and pit removed)
  • 1 tbsp red onion (finely diced)
  • 1 tsp fresh ciltantro (finely chopped)

Instructions

  1. Combine all ingredients in a bowl and lightly toss to combine.  Use to garnish soup or scoop up with tortilla chips!
