A quick salsa, great for topping Black Bean Soup!
- 1/2 cup chopped bacon (crispy)
- 1 8.75-ounce can whole kernel corn (drained)
- 1/2 avocado diced (skin and pit removed)
- 1 tbsp red onion (finely diced)
- 1 tsp fresh ciltantro (finely chopped)
- Combine all ingredients in a bowl and lightly toss to combine. Use to garnish soup or scoop up with tortilla chips!
